This is over £1k, but slightly cheaper than you suggested build. I have stepped back on the CPU and RAM to improve storage and PSU (which will run much quieter). I would wait for some other opinions, as there are some audio experts on the forum.

Different drive types are for different purposes. HDDs are cheap and come in large sizes, but are slow. They are good for bulk storage that doesn’t need fast access times. SATA SSDs are about 4 times faster than HDDs, but more expensive. M.2 SSDs use a different interface and are 4x to 12x...
The CV range are really for office PCs, while the RMx are top spec. The configurator shows what you need now with a 20% extra headroom. We specify bigger to allow for future upgrades and so the PzsU is under less load. It will be quieter and last longer.
This alternative had better storage and PSU and is still within budget. You need to be looking at a 1440p monitor to go with it. Others will be able to advise better.

What resolution and refresh rate for the monitor? Can you provide the complete specification and configuration link, as there are areas that can be improved?
I would aim for 500GB for the smaller m.2 drive. It will add about £50 to get the 500GB Samsung 980 Pro, or you you could go for the 512GB Intel 670p for a saving of £1 (£1526 in total). The Intel drive will be slower, but in practice you probably won’t notice it much.
You don't need a 3080 for 1440p 144 Hz, so I have picked a 3060Ti (3070 would also be good, but out of stock). I have made some chnages to motherboard and storage as well.

I would want to improve the storage, PSU and cooling, but that would bust the budget more than you already have. The 5800x runs hot. I am not sure you need a 3080 for 4K 60Hz, but am not sure for FS2020. Others will probably chip in. Unfortunately, the 3070 is on pre-order, so might have a long...
Given your usage, I wonder if something like this might meet your needs. I would wait for some others to weigh in, though, to get a range of opinions.
