As above, the 3700X and the 2070 is a great combination. I would also add more storage, just 1 512GB drive might not cut it after a while. Not sure on MSFS but may P3D installation is approx 200GB
What GPUs are they Spyder? Could be a DX11 vs DX12 thing? It is odd it’s different out of interest, like you say could be CPU or maybe the motherboard.

I’ve cloned several drives and never had an issue. If it’s NVMe to NVMe there shouldn’t be a problem. If it was sata to NVMe, that can be tricker as specific drivers will be baked in and the bootmgr would need redoing to expect nvme not sata.

Is there a reason you did a fresh install of Windows? If your Windows was in an ok state on the old drive, try cloning the old drive to the new drive and resize the partition and see if the issue is still there?
If it runs at 120W TDP when plugged in then it will be fine to run at 120W TDP on battery. Granted the battery might not last long:LOL: But these are only maximum values, not constant so it will draw less power when needed
Nothing will have changed Ubusya. It does show ok for periods of time but as soon as you try write any decent amount of data too it, it will fall apart and disappear. Usually won’t appear again until you unseat and reseat it. Then rinse and repeat.:)
