I've now made a clean install of windows and installed all windows updates.
Where do I go from here? That is ALL I have done. Nothing more.
I can tell from dxdiag that there has been no change so far.
What exactly do I install now, and in what order? :)

When reinstalling windows, after it is done. Do I then install all windows updates first, or the nvidia driver from their website first?
And when installing the game ready driver through nvidias website, do I include geforce experience in that install...
I may sound dumb here, but I've never tried a full reinstall. How do I go about doing that?
I did try to uninstall the drivers as you said, then uninstall through ddu and lastly installing the drivers through the nvidia website instead of nvidia geforce. It didn't correct it. I chose game ready...
I've now tried to uninstall the RTX card with ddu, restarted laptop then installed geforce experience and the driver through it, then restarted the laptop again.
Still the same in dxdiag. And the same error in device manager.
Yes I did reinstall the drivers. When I looked under devices there are intel GPU and my rtx 2070 super, my rtx 2070 super has a yellow exclamation mark.
Where do I see display 2? I've run dxdiag and not sure where to look. I am looking under display (it is not called display 2), and I only see the intel GPU under the display tab.
There is an error at the note section with an error 43, problems with the geforce rtx 2070 super.

I got my Vyper 17 with rtx 2070 super today. I have the 14 days return and I've suddenly realised I might have made a huge mistake as the rtx 3070 will be about twice as good and the same price??
I feel defeated and not sure what to do, and at the same time not sure when I then would...
It won't come in handy in the future? I love heavily modded games 😁

Not 100% sure about cooler platforms is that like the one pcspecialist sells that the laptop can stand on? Would you recommend getting that one? :)

Small update. Thanks to @Nursemorph advice I am a step closer.
I've tried to change the configurations a little, since I already have a windows 10 license I can use.
Is this configuration with this chassis the best I can get for my money? Is there any red flags?
I just want to be 100% sure...
