They do, I've seen many such re-enactments. They will not come out of character when you talk to them. They take it all very seriously and strive for absolute accuracy. Its not just for fun!
One of my favourite films is Gettysburg, about the 3-day battle. All of the extras were re-enactors, who not only brought their own authentic kit and gear, but who knew exactly what had taken place and where.
