That one you have selected looks OK for the money. It's a little lower than I would like frequency wise, but given it's faster than what you currently have it should suit your needs if you're not looking for moaarr frames.

What monitors is it you currently have? £300 is around the budget for an entry level 1440p gaming monitor. I don't think you're going to tick many boxes in the replacement of 2 screens.

There's definitely something strange. I have a full Fanatec system going through a USB hub at the same time as a USB kicker type pillow, Flight stick and also a motion rig. It took a bit of testing to get the right USB hub, but once I had it in place it's been brilliant.

In your shoes I would remove all connections that aren't required for a boot, remove the CPU and remove the RAM. Switch it on and see what happens. You should get a RAM/CPU warning. It won't post or anything like that but it should give error lights.

There are 2 ports on the motherboard for direct connection. HDMI and DP, as long as your monitors can take these connections then you can connect 2 screens no problem. If either of them are incompatible you can get cables that are, but you would be in the same position with a dedigated GPU...
You could lower the PSU to the 850w RMx, on the non-gaming offerings, without any issues at all (or even the RMe) but given the small outlay I would stick with the 1000w offering.
This would be for 1440p gaming, but would require a new monitor to support it.

It really depends on what your gaming preference is. If you're looking to play any Flight Simulation (FS2020 or FS2024) then I would stick with the 64GB. I don't think there's any consideration outside of that use for 64GB though.

Given the budget the world is really your oyster. I wouldn't be so stuck on 4k gaming, I think that opting for ultrawide/super ultra wide at 1440p would be a better experience. If you can factor in around £1k for a monitor you can get the ultimate gaming experience.
