I'd personally add another storage but this is completely up to you. File sizes are larger these days and normally 1TB of storage can fill quickly especially if you're going to have some games on there too :)
Also I'd maybe bump it up to 32GB RAM for the occasions you're buying your PC for, but...

One more question, I've already got 1TB SSD as my 1st storage and a 2TB HDD as my 2nd storage, is it worth amending my order for a 128GB M.2 drive for an extra £25.00?
So I've ordered my PC with 32GB RAM, and I've got it with two 16GB sticks. Is it best to stick with this or is it better to get 4x 8GB sticks? I'm going to be using this for heavy gaming and also running virtual machines for work, so I need to know which is best :)

When I was reading my contract with Hitachi it says you have 12 months to pay it off with no interest so you could keep making repayments for the first year I believe, any amount. Just as long as it’s paid for in the first year there’s no interest, just need to log into your Hitachi finance plan
I realised that PCSpecialist say they're open on bank holidays, but it just doesn't count as a working day. Does this mean that it will just be customer services in working or does it mean everything is like normal but it just won't count as a working day for your order?
Configure me an AMD build (as I obviously know nothing about them) and I'll have a look into it. My budget is £1500, can push to £1600 if really needed. I want it as close to what I have now but in AMD terms if you can :) I'll post my specs below what I've currently got ordered

To be honest I'll just stick with what I've got. I don't want to go through the hassle of changing it over to an AMD system as I have no clue whatsoever about that side of the PC world. I guess the 10th gen processors are new so we'll see how they perform :)

Yeah we spoke on another forum chain, the CPU choice is due to being able to run the new Microsoft Flight Simulator 2020 coming out later this year and to future proof my PC :)
