Just spoke to Live Chat as it was kind of confusing, they confirmed they have some staff working before and after working hours due to the amount of orders they have, so that would explain the random update times :)

Changing stuff whilst in Pre-Production wont delay it at all, would only start delaying it when in Building. I’m on working day 16 and it went into Building today :)

I did indeed [emoji23] I don’t get mad about it because there’s nothing I can do about it, apart from just wait :) Id not be happy they just didn’t tell me anything, they’re giving information so I’m fine

Alright an update: live chat have just told me according to the queue my PC will start being built on Thursday. Ordered on the 18th May and Pre-Production since the 22nd May for anyone else around these times to get a better understanding :)
