For your boot drive, get an M.2 instead of the classic SSD.
They are not far off when it comes to price and will be quite a big difference.
& Get the 2080S from PCS or buy it off amazon for like 600£. Even 1440p on Ultra settings wont go below 60fps using the 2080S. (Exception for some games...
2080 Ti is a bit of a waste of money in my opinion.
Very overpriced for the performance you gain comparing to e.g 2080 Super.
Get a 2080 Super for 600£ less and put that elsewhere & Upgrade to next gen GPU's when they come out instead.
If your son is inexpirienced as well as you, I am guessing you don't plan to overclock the CPU I suggest you get a normal CPU ( without the K , e.g 9700 ).
If you can squeeze it in the budget get a RTX 2060 or RTX 2070 preferably.
Change the watercooler to air cooling solution like Noctua or...
I prefer Intel based Systems so I went with the i9 9900k for the combination of Gaming, Editing & General Usage.

I'm also thinking to change my storage to.
250GB M.2 SSD for system.
2 or 1 TB SSD for gaming.
4TB HDD for photos, movies, (some games), etc.
He mentioned above he will be doing video editing so 32gb ram is justified.
If he has a high budget and doesn't care about saving, it's a solid rig and very much future proof.
