I play mostly PUBG, Valorant, COD and Heroes of the Storm.
Going to play on a 1080p monitor at 144hz

I posted a spec a few weeks ago but now decided im happy to wait for one of the NVIDIA cards to come in stock so have changed the spec (ok i didnt a friend did, i know nothing)

Im pretty sure this spec is wayyyy overkill for my requirements but i felt like treating myself haha and yeah the fancy light up stuff isnt necessary but...pretty lights!!

Im way over spending though i know, so tweak away little PC fairies :)

It's massive overkill for 1080p, I'd honestly recommend getting a 1440p 144Hz monitor like the Samsung G5 with the build though. It's a very strong build so I'd recommend a monitor to suit

I would say for gaming though you can drop to 16GB Ram, you don't really need 32GB for gaming

As above! We can make this significantly cheaper to match the monitor. If you still want more of the RGB goodness, you could substitute the CoolerMaster 240 with a Corsair H110i RGB Platinum, although it's not a necessary move. Here's the direction I'd go in...

As @Steveyg noted, that build would better suit 1440p 144hz. If you wanted a build to suit your monitor. This would be the build I'd recommend. the 5600X is a great chip and the 3060 is perfectly fine for 1080 144hz.

Ideally I want to be playing FPS games at 1080p though
Do you mean 144Hz? You could with the 3060, just need a few judicious setting changes to get high frame rates. The 3060Ti is overkill so the 3070 would be spending money for nothing.

If you're committed to going overbudget and can spend £2200, a 1440p system and monitor is within the realms of possibility....

I honestly don’t even know. I think I just need someone to tell me what the best thing is for gaming 😂 I play a lot of multiplayer games like pubg cod etc and won’t really be playing any single player games that require amazing 4K monitor to look good. Guess I’m more interested in quicker refresh rates so I can play more competitively

my pc now is such an old potato bless it. I’m amazed it still runs ! So anything would be an amazing upgrade at this point

With competitive gaming in mind I would be more inclined to stay at 1080p. Maintaining high refresh rates is easier at the lower resolutions.
The build by @AgentCooper is going to do the job nicely. The 3060 will be able to max out your monitor if you turn your graphics settings down to play competitively.
Down the line you can consider whether your best upgrade would be a switch to 1080p 240hz or 1440p 144hz. 240hz gives you a better response time, but 99% of the population can't discern anything beyond around 120hz anyway, so a step up to 1440p might be more beneficial instead, as the added pixel density improves overall gaming experience as well as increasing clarity in longrange targets. But this discussion is best left to when you're ready to make that next step up, as the GPU and monitor market is constantly developing so it is very hard to futureproof.
