Looks like you are talking Windows 10 Pro now. If so then there is no problem (or ever has been) with my 10 year old laptop. Right click on the task bar, click on Task Manager and 'Hey Presto'. There are also 11 other choices.

Not sure what you mean? I'm talking about Windows 11? The functionality of the 11 choices was depreciated with it and we were discussing it's apparent resurrection in 22H2.

Just checked the laptop and a right click reveals a task manager, and that's on a clean install from the other day

I apologise, I am getting confused. Your systems implied you were still running W10. However I now remember that W10 version 22H2 has been waiting for download for some time. I don't see much point in doing this for a 10 year old laptop and associated software - but at least mine works.

Mine updated yesterday evening, and was shocked to see the tabbed file manager (which I'll never use) and no 'approved' way to disable it.

Noticed the Task Manager mouse menu-item too!

Although did see some strange menu glitches just below the tabs/toolbar, were old-style menu labels for 'File', 'Edit', etc. were flickering into existence randomly.
