Personally would rather opt for 5800x to a 5900x then a 3080 to a 3080ti you had no os in your original spec so removed it

Now chucking the 5900x in there and coming down to the 3080 rather than the 3080Ti is really upping the ante, especially with 1000W PSU (y)

This is more what I'd go for as VR is more CPU demanding than GPU.

But we still don't know monitor specifications or use outside of VR and sims, so it's hard to be conclusive.

My monitor is Acer Predator X34P

It's purely for gaming, the focus is VR on Reverb G2 and sims but I like flat games too, and I'd like to crank up the details as much as I can on my monitor's native resolution - 3440x1440 at 100Hz

For the case, I'm planning to reuse my old one, which is Corsair Carbide Series 600Q "Silent" Full Tower Case
The case is essentially a black box which is how I like it. The less LEDs the better for me.

For storage, I have these 2 from my old PC, which I want to carry over to the next build:
- Samsung SM961 Polaris 512GB M.2 PCIe NVMe
- Samsung 860 EVO SSD 1TB
Then on top of these, I'd like a 2TB NVMe as a main disk
