Thoughts to this spec?

Whats your thoughts to this spec? Looking to upgrade from my i7-6700k & 980Ti - Asus Maximus Hero 8 Motherboard + 16Gb Vengence 2666Mhz Ram

Will be used for :

Gaming, VR, Video production, Citrix (Work), Mod creation (Bethesda Creation kit), possibly streaming and 4k video playback.

Current monitor is a Asus 144Hz gaming screen and a LG 4k TV for video playback.

Also I know Ryzen could be more capable for gaming but I have been burnt by AMD before and trust in Intel.

How long ago were you 'burnt by AMD', if you don't mind me asking? Because a LOT has changed in the tech world over the last few years.

I would seriously suggest you rethink and look at AMD for what they are now, not what they were. Since Lisa Su took over AMD are a completey different company, while Intel have stagnated with old architecture and multiple issues.

There's an AMD equivalent: the Crosshair Hero VIII. I believe it's currently out of stock on PCS, but it is an option if it's what you really want. (Though, depending on your CPU, it may be overkill.)

With the AMD thread I noticed "The current chips beat Intel in almost every metric, the only area that Intel still win is 1080p competitive gaming. When you hear "Intel are the gaming king", this is simply referring to 1080p high refresh rate which only applies to a very small fraction of gamers.". As most of my gaming is at 1080p 144Hz (4k mainly on TV only) due to the refresh rate difference, maybe intel is still ok?

The differences are infinitely small, and it's only at 240Hz competitive gaming where they edge it. Where your settings are dialled right down and it looks horrible, but might gain you an extra few frames per second. For 144Hz I'd still be looking at AMD.
