If I don't select windows home in my order, I am guessing the computer arrive with nothing on it and it will be upto me to set it up?

It will likely turn up with a test copy of Win used when they checked it, you will need to install a complete fresh copy of whatever you are going to use. Im transferring my Win 10 licence from mylaptop to the desktop ive ordered, so will need to do the same.
If you buy a OS off them then that will be installed on there, but the test copy isnt the same you dont want to try using it youll have issues later.

I guess that will mean I also have to download all the drivers etc for the new parts in the computer after installing a fresh version of windows?

It's something any user should learn to do regardless as it's one of the best areas to solve any problems with a system.
You can probably activate using your license and go with whatever windows is installed on the system but I would always belt and braces it.
I can do it on my current computer, its just on the new one with different bios to boot from usb, and knowing what different drivers to download
Nowadays Windows should cover just about everything. All you should ever need to install nowadays is the chipset drivers and I would always manually install the GPU drivers.
AMD provides the chipset drivers direct as does NVidia.

The BIOS is normally pretty straight forward, I can't imagine any issues. It's all fairly self explanatory once in there.
Boot to the USB, wipe all drives, install windows on the M2, install chipset drivers, install GPU drivers, run Windows update multiple times until it says there are no more updates.... job done.
Be sure to use the latest installation of Windows using the Media Creation Tool
When you say install chipset drivers what do you mean? Was that the link next to X570?
I went for the X570, so do I download the x570 you linked to and the Nvidia Game ready?
I was planning on getting the USB from Amazon as I'd need to buy that to get the license anyway. Are you suggesting a different way? I'd have to make my own usb from what I see

I thought if the usb wasn't the most up to date then it would update anyway after the installation through Windows Update.
I can still create the usb myself through the creation tool you suggested (on my current computer), just assumed as I need the license as well I may as well buy it off Amazon with the included USB as its cheapest I've found.

I know that it says Microsoft Software in there, I'm just not convinced it's legitimate. There are no reviews and it's significantly cheaper than what Microsoft sell it for themselves on the legitimate website.
The license is the issue.... not the USB. If it's an OEM activation key it's both illegal and it can be dropped at any time. With a proper key you know you are covered.
