Yes :) I ended up optining for a normal case, and I'mn just going to put it on the top of the desk and be done with it.
Normal case is fine by me, but you want a decent case (like the Corsair 4000D/X) rather than an unknown entity in a PCS case (we don't know exactly what model/make they are so can't say what they support or how easy they are to reconfigure).

So would a Corsaid 850W do the job? Most of my stuff I do is just browsing, VisualStudio, and editors. Occassionaly I do video editing - but nothing too fancy.
850W would be sufficient, but it's the older ATX2.4 spec (different testing and power handling process for higher quality components and surge protections). That's why I said to either go for the ATX3 750RMe or it would have to be a 1200W RM Shift (or higher to get ATX3 spec).

I'm a bit lost on this one. What is "zen 3" ? The one I chose was Ryzen 9 (I assume "zen 3", you mean Ryzen 3? As in shorthand?)
Zen3 / AM4 are the generation of CPU and motherboard chipset/socket - equivalent to Intel's 11/12/13/14th Gen and 'LGA 1171' etc. At a certain point the CPU makers change the 'socket' which means you can't put an older CPU in a new motherboard, or vice versa. AMD tend to get 3 generations out of their chipset/socket and have performance improvements of 10-20% at each stage.

Ryzen 3 / 5 / 7 / 9 are the CPU performance levels / number of cores - broadly equivalent to Intel i3 / i5 / i7 / i9 - where Ryzen 9 / Intel i9 are the most powerful.

However, a Ryzen 9 / i9 from 5 generations ago is nowhere near as powerful as a Ryzen 9 / i9 of today (ignoring the fact that the latest i9s are useless)...sometimes it's because the number of cores has increased, and sometimes it's the performance per core that increases.

So a current gen 9950X will be about 70% more powerful than a 5950X (7950X is 45% more powerful than the 5950X). The 9900X and 9950X are pre-order at the moment though, so wither wait or consider that even a 7900X is faster than a 5950X in single core tasks, and about the same speed in all-core tasks.

Don't forget that the motherboard will support both of your existing GPUs (R7 200 and RX580) as well as having the basic abilities of the CPU/motherboard Radeon graphics (in case you want 8 monitors).

This is about as low as I can get it by putting in a Prime motherboard (office PC level motherboard), and I'd really rather have the more premium components in the TUF level of motherboard for another £50.

I'm also assuming you'll have a Windows licence to transfer from your old machine.

The just release 9000 series CPUS are about £100 more than their 7000 series counterparts, so have stuck to a 7900X for budget sake.

Case
CORSAIR 4000D AIRFLOW TEMPERED GLASS GAMING CASE - much better case, no flashy RGB, but good cooling
Processor (CPU)
AMD Ryzen 9 7900X 12 Core CPU (4.7GHz-5.6GHz/76MB CACHE/AM5) - more modern, efficient CPU with similar all-core performance and faster single core performance
Motherboard
ASUS® PRIME B650-PLUS (AM5, DDR5, PCIe 4.0) - not the optimum motherboard, but not quite the most basic & cheapest
Memory (RAM)
32GB Corsair VENGEANCE RGB DDR5 6000MHz (2 x 16GB) - about the minimum you'd want for photo/video editing, and at the sweet spot for this generation CPU/platform
Graphics Card
INTEGRATED GRAPHICS ACCELERATOR (GPU) - you also have the R7-200 and RX580
Graphics Card Support Bracket
NONE (BRACKET INCLUDED AS STANDARD ON 4070 Ti / RX 7700 XT AND ABOVE)
1st M.2 SSD Drive
512GB SOLIDIGM P44 PRO GEN 4 M.2 NVMe PCIe SSD (up to 7000MB/sR, 4700MB/sW) - new, fast SSD for Windows / apps only...anything else you have can be slotted into one of the free m.2 / SATA ports...unless you already have a similar speed m.2 to go in, in which case we can swap back to the PCS one to be 'discarded' on arrival (keep it in your spares box just in case).
Power Supply
CORSAIR 750W RMe SERIES™ MODULAR 80 PLUS® GOLD, ULTRA QUIET - the minimum I'd go in power level and ATX3 spec, but not much room for upgrading if you were considering putting a beefy GPU in there at some point
Power Cable
1 x 1.5 Metre UK Power Cable (Kettle Lead)
Processor Cooling
CORSAIR H100x RGB ELITE HIGH PERFORMANCE CPU COOLER - adequate for that CPU, and this budget, but would want a H115/H150 if you went for a 5950X/7950X/9950X CPU
Thermal Paste
STANDARD THERMAL PASTE FOR SUFFICIENT COOLING
Sound Card
ONBOARD 6 CHANNEL (5.1) HIGH DEF AUDIO (AS STANDARD)
Network Card
ONBOARD 2.5Gbe LAN PORT
USB/Thunderbolt Options
MIN. 2 x USB 3.0 & 2 x USB 2.0 PORTS @ BACK PANEL + MIN. 2 FRONT PORTS

Thanks for the explination. I don't see anything more than 5950X on the list though? (not even 7900X)

Yes, wrong configurator.

If you click on the link in my config, it will get you to the newer tool...

Thank you - that looks good! I actually have a 4TB m.2 ( https://uk.crucial.com/ssd/p3-plus/ct4000p3pssd8 ), which I guess I could put in as my secondry. That'd give me more than enough.

How long to PCS take to reply to an email normally? I emailed them the spec just to confirm 100% I will be able to fit my extra m.2 drive + the R7 200). I want to get it ordered already :/
