Do Steam just release all the sale games at once or drip feed them over a few weeks??

Not sure whether to buy a few early on and risk missing better deals later

Have you never partaken in a Steam sale before?

Typically, the summer sale - the biggest and most amazing sale in existence ever - they have a few ways the sales work.
Primarily, you have the daily sales. These are a selection of 6-12 games (usually an even number repeated through every day of the sale), which last for 24 hours. Once the 24 hours are up, those games are replaced by a new set of games at different prices. This goes on for several weeks.
In the last day (or last few days) of the sale, they have a 'best-of' sale, where the best-selling or most popular (they're still picked by Steam so I'm not sure) have their sale repeated for those who missed out.

Often, publishers will post their entire catalogue for a heavy percentage off - usually 50% or higher, usually with the exception of very recent games. The Valve pack (every game they've ever made) was less than £50 last summer.

As well as the standard sales, there's the vote sale. Steam posts a choice between three games, and everyone votes on which game they want to be on sale. The game with the most votes goes on sale. In the past, each of these vote sales lasts 8 hours, during which people vote for the next one and at the end of each vote sale it's replaced by the next. These vote sales are usually for 75% off or higher, which means that a game that was 50% off yesterday but won the vote sale today is now cheaper than it was yesterday.

As well as all the sales, there are also achievements, and occasionally competitions. For example, in the previous summer sale there were achievements for voting on a certain number, and all, of the vote sales - there are other achievements as well. Getting these achievements can get you a free game or coupons.

I've never bothered before as I just played FM on the PC. I've got a feeling I'll be spending a fair amount on it this summer though...
