Just found this on the ASUS support site, it's a bit mad they make you enable this to change boot priority!

1. Enter the BIOS setup menu by pressing and holding F2 key when powering on.
2. Switch to “Boot” and set “Launch CSM” to Enabled.
3. Switch to “Security” and set “Secure Boot Control” to Disabled.
4. Press F10 to save and exit.
5. Press and hold ESC key to launch boot menu when the Unit restarts.

This really seems a bit advanced for this time of night, il have to sleep and check that article again in morning . , if I do a clean install tho , how do I still tell mb to boot to the 500gb? I don't want to open up the beast and remove the graphics card and figure out how to remove the m.2 either

You've already set the 500Gb to the first boot device haven't you? It's just failing to boot and passing onto the next device in the boot menu. Likely means the clone wasn't successful.

I really appreciate the help btw , yeh I had deleted the 2tb from the drives u pick in some setting and even when I go to the main boot from option I had chosen 500gb but it still booted the 2tb. I appreciate suggestions u might have if u think cloning didn't work. I'm just not sure i wanna take the card out of this beast to get to the m.2 coz one is above and one is below the card which is harder to access . This is an expensive kit I don't want to break anything 🙂 I'll come to it tomorrow morning with fresh eyes

As I said, clean install will be much easier, you don't need to remove anything to do that.

You can’t break anything with software.

The first part when you boot the windows installer is asking you which partition to install to. Delete all partitions from both disks (this will delete the existing windows partition), then install to the spare space on the 500gb drive. The rest is straightforward.

Then one you’re in windows, run windows update repetitively until there are none left including optional updates.

Then install the GPU driver itself direct from nvidia and iCue or whatever else you want on there.
then you should be good to install whatever you want.

Download a new copy of Windows using the Media Creation Tool to an 8GB (min) USB.
Boot that USB and choose a Custom Install.
Delete all UEFI partitions on the system drive (EFI System, Recovery, MSR Reserved, Primary).
Select the unallocated space that results and click the Next button. The installer will create the correct partitions and install Windows.
Run Windows Update repeatedly, even across reboots, until no more updates are found.
You may need/want to download and install the latest graphics driver from the Nvidia/AMD website (they change so regularly the latest version isn't always in the Windows libraries).
