Need a powerful PC for gaming but other things are more important

Hello and thanks in advance for your help. I've been building my own for almost 20 years but I haven't kept to date with the latest developments and I feel dumb.

Essentially I need another PC that will work for my business specifically but also let one of my closest staff members play high-end games in recreation. It will also be on display in a visitor area at times so I want it to be a bit of a centrepiece, perhaps running graphics demos and the like when we have people in.

Windows 10 PC that will boot very, very quickly. I know there are software considerations but I would like the fastest possible OS drive (plus any other advice on achieving this fast boot goal)

A very fast 2TB HDD (all of the other storage is on NAS)

Any type and volume of memory that will minimise time opening, switching and working within applications.

Often used for web-based work that typically involves Chrome, Firefox, Opera and potentially another browser all open at the same time, with each running up to a couple of dozen tabs, with video and large datasets being transferred in and out for at least a few hours a day at the same time, all of it over encrypted connections.

A fully-loaded Photoshop will be running alongside, a video editing suite, two dedicated stand-alone software email clients as well as a resource-hungry RSS reader.

A powerful reliable graphics card capable of running at least two 32 inch HDMI/DP (prefer HDMI) monitors at the highest possible resolution all of the time. As I said, AAA games will be run at select times but the priority is getting this right for the business tasks mentioned first.

Any advice on motherboard requirements appreciated since I haven't a clue

Even if only one is for gaming, you are talking about 4K screens, and for gaming AAA games on a large 4K screen are going to want a 20780ti, rather than the 2070 super.
