Thanks, my budget is £1800 and I currently have a msi optix G271 27” ips gaming monitor.

There's a few options you can go with your budget. The below is a strong all-round gaming CPU, which will perform very nicely with your current 1080p display, and has the room to fit a GPU and monitor upgrade down the line if you want.

£1800 also has the scope to go for a 1440p gaming build by cutting back on certain areas, but it becomes very hard to fit a new monitor into that as well as you'll want to spend ITRO £300-£350 for a decent IPS 1440p display.

Thanks for the help. Only question I have is why you change to an intel processor and AMD gpu as most people I know have an AMD cpu and nvidia gpu

With the current 12th generation Intel are performing better than AMD, so they're the CPU pick at the moment. AMD is also at the end of its current platform, so there are fewer upgrade options, while Intel has at least one more generation on the current motherboard, so has more room for upgrading.
For pure GPU grunt the 6600XT is more powerful than the 3060 while also being cheaper. Nvidia's main advantage is their feature set, but for the games you mentioned you don't need Ray Tracing or NVENC and for pure grunt and frames, the 6600XT is what I would recommend.

There are a few issues with the spec youve given, motherboard, storage configuration, WiFi card and cooler choice being the ones that stand out the most. PCS cases arent really worth taking either to be honest, they come with issues of their own.
With a 5800X you would want one of the Tuf series motherboards, not prime, and a better cooler (imo) and the storage isnt really optimal, plus its an old card, you want the AX200 so its WiFi 6 (also a very good, cheap card).
If I balanced the choices youve put for a AMD I get something like this:

That can probably still be tweeked to be something more rounded, but im not convinced @MrWilson build wouldnt give you the same/better performance, has a better PSU in terms of upgrade potential and come in at a better price.
