If i've got the right one... extract from review:
Miscrosoft Flight Simulator is obviously a gorgeous game with a ton of fidelity in every frame, so you’d imagine a pretty substantial machine would be required to run it smoothly, particularly at 4K as is shown in the reveal trailer. It turns out that the minimum specs are actually pretty reasonable. To keep it brief, here are the recommended system specs:

CPU: Ryzen 5 1500X / Intel i5-8400
GPU: Radeon RX 590 / Nvidia GTX 970
VRAM: 4GB
RAM: 16GB
HDD: 150GB
Bandwidth: 20 Mbps
Thanks for the advice, is there a monitor that I can buy on here as an added extra that is 1440p?

Actually no worries, I've picked one that is an AOC 144Hz and adjusted the storage to just 1TB Seagate- sound okay? It means I should be just a wee bit over budget but hopefully good enough

Slow down a bit, your budget and wants are changing quite quickly and the changes and choices might not be best.

Can you confirm your max budget please and if that includes the monitor or not?

I'm looking at doing it on finance so my budget is £55 each month through the finance option, works out at around £1600/1700 in full with VAT

So, we really have 3 options here:

1) We can spec a system built for 1080p 144Hz gaming which can then be upgraded to 1440p 144Hz (would need a new graphics card and monitor) when you can afford the upgrades (around £600-700) and you wanted to upgrade (1440p is miles better than 1080p);

2) Spec a system for 1440p 144Hz, on the proviso that you would be able to manage to buy a monitor elsewhere (the system from here would cost £1343, the monitor from elsewhere around £280...depending on the site, they may also have finance options) which would need no upgrading;

3) Go for a compromise build whereby you get the 1440p gaming but at a slightly lower level (75Hz instead of 144Hz....I have a system at this level and I have no issues with the quality of graphics on the games I play).

Normally, I would be recommeding option 2 as that is the best choice (as it gives the highest level of gaming)...however, I appreciate the financial aspect of buying the system so option 3 may be the most appropriate depending on your current and near-future financial options.

Apologies if all this choice and different graphics level is a little over-whelming....I just wanted to make sure to give you all the options that I can think of so you can make the decision rather than me pushing you. I am happy to do a spec list for any of the options.
Thanks so much for your help, I don't know where I'd be without you! I think I'd like to go option 2, it's not ideal trying to get the monitor elsewhere but I do want to go for 1440p gaming so I'll try to do that. If we can get finance options for the monitor it'd be fine, the current monitor I had on the specs was about that expensive anyway (but was only 1080p). In terms of the system itself I was looking at going for a GEFORCE 2060 (wanted 2070 but don't know if it's possible through the pricing) and Ryzen 7 processor, but you're the expert here so if you could get me a spec list that'd be much appreciated!
Flight simming would be one of the main purposes of the machine, but I'd like to kit it out well so I can play other titles that come out in time too.

Have put some storage there but the 1TB SATA can be removed to save money if necessary...you could always buy one in future when you needed more storage as they are quite cheap and easy to install
Would it be okay to make the case a bit simpler or would it make an impact? Just trying to cut costs as much as possible, other than that it's great!

That case is about the lowest you want to go without messing up thermal performance. The case isn't just about looks, it's about thermal performance primarily.

No, because the air moving through the case is the important thing, if your case can't move the air, doesn't matter what cooling you have inside, it will overheat and throttle.
Thank you, managed to convince my Dad to keep the case- he was adamant that the cheap one would be fine but I don't want to waste a load of components being fried just because of a crappy case. The PC's all ordered now, thanks for your help- I'd be absolutely lost without it!
