They can just send you the system and you can pop in the GPU yourself, it’s an easy install 🙂👍

No they wont install it for you, but you can install it when the PC (without GPU) turns up.
They have an open-case policy so you can add your own stuff without voiding the warranty

No. However you can select you have your own GPU when placing the order and fit it yourself.

All the above, but one suggestion would be for you to contact them and let them know what card you're putting in it, and ask them if they can place the power cables for the card in the correct position for you. Apparently they do a very good job of cable management, so would save you time cutting ties and redoing some wiring.

In case you are wondering how, it is incredibly simple

Insert it into the motherboard, screw it onto the case, attach the power cables (i think mine is a 6 pin and an 8 pin), download the drivers.

Failing that, they are plenty of YT vids showing you how, it's very simple to do.
