Hello, I'm looking to build a gaming PC capable of running games like Fallout 4, The Witcher 3 ect. Running 1080p, 60hz on pretty high settings.

My budget is around £1,300 but I could go up to £1,350.

The spec below will be significantly better for gaming compare to the spec you posted. The difference in CPU won't provide any noticeable difference and 8gb ram is plenty for now, you can easily add more in the future.

I'd like to keep the watercooling if at all possible, you don't think its worth trying to keep DDR4?

Why the hydro cooler? Overclocking is not needed for gaming and DDR4 won't bring any noticeable improvements for gaming either. You can add the hydro cooler but for your budget you need to downgrade other components which I wouldn't recommend.
 
I'd prefer watercooled, and while primarily for gaming it'll also be used for some lab work, processing quite a bit of data. I'm tempted to get my original spec and then upgrade the GPU after a year or so as it's the only improvement I can see with your spec.

Change the SSD on your original spec, the V300s have performance issues, better to go for the Hyper X or Samsung.

So if I phrase it a little differently, how is this desktop as a base set up? I'd be looking for it to last about 5 years or so but I could probably update to the 980ti in a year or so ?

Order the review PC, then order the peripherals separately, or ring them up and ask if they can add the peripherals on at the same time (they will be able to sort something out)
