I've got another 300 pound to play with on budget. I have 2 250gb SSDS I can run in raid 0 and a 2tb HDD from my current pc that I was planning to bring over, though apparently my motherboard can accommodate 2 M2 SSD's?

I'm looking for general advice. Over heard rumours of things like RAM setup, and have no idea when it comes to cooling, I just picked stuff. I plan on overclocking or undervolting my 3080 when I get it.

It'll use windows 10, I already have codes

If you do, its much easier for us to give advice if you can post the entire spec (via the post to forums button) including the configurable link (at bottom of the post to forum page) and let us know your budget.

the reason you don't put the games on the same drive as the OS is if you ever have to clean install the OS at any time you don't have to download all your games again

If you look on the configurator there are 2 places you can specify 1st M.2 drives

Agree about onboard sound, I listen to a lot and varied music, from opera and classical to rock and reggae and would not consider a separate sound card these days.
