Is it viable to have a AMD CPU and a Nvidia GPU?

Any do’s and dont’s with this combination?

It's perfectly fine. It's what I have (5600X and 3060 Ti), along with millions of others! In general, graphics cards are fairly intercompatible with other parts of the system: they work on a standard set of protocols (PCIe) and so are agnostic of the different manufacturers, certainly these days.

Assuming you're talking to me, I've got the ASUS ROG Strix XG27UQ which is a 4k 144Hz monitor. It's pretty good, but a little tricky to get one these days, but there are better models out there.
