Any advice on this configuration?

I will be playing a range of modern games and trying out streaming and video editing. I have a maximum £3000 budget. Any advice would be appreciated. I'm mainly worried about whether my current cooling selection will be enough for this config.

That's a 1080p display, it also uses the older TN display format which is poor image quality by today's standards. Pairing the build above would be like buying a Ferrari and then only driving it at 20 on a bumpy country road; it'll look good but you can spend a lot less for the same performance.
If you want to stick with your monitor you can save just shy of £700 downgrading to the 7800XT without seeing a huge difference in the majority of titles.
If you were looking at a monitor upgrade, would you have any additional budget for this?

Tbf, in that case I’m happy to save money where I can as I’m not really looking for a new monitor atm. I mainly just want to upgrade my system to something that’s modern and future proofed for a few years as my current setup which is about 5-6ish years old is running on a 1070 with an intel i7 8700 so anything is better tbh. Is there anything else that should be changed if I downgrade to a 7800XT? Or is it fine as is?

The main saving is the GPU. I have upped your cooler to the newer Titan series as this has improvements on the pump and other areas. I took out the extra fans as they won't be strictly necessary, but can be included back in for aesthetics, and the extra airflow certainly won't hurt.
The PSU could be pushed down to 1000W, but the extra power gives you the option to slot in a higher end GPU down the line to coincide with a monitor upgrade at some point down the line. Not a whole lot to change though, the spec was pretty solid to begin with.
