You could also save a bit by changing to the TUF X570 motherboard, the ROG Strix wouldn't be a necessity with the 5800X.

I think you've gotten the storage mixed up still. If you click on "more storage options" it'll show you the 2nd M2 drive option. Any of the M2 drives will be significantly better than the standard SSD option. Additionally, having a small SSD and large M2 drive doesn't really make sense as you would want your OS on the smallest drive..... not to mention the fastest.

yes, the smaller one for the OS, then the larger one for your games, that way if you need to clean install the OS at anytime all your games and saves are safe on the larger drive

As above. I wouldn't go all out on the "game" drive. Games don't get as much of a boost from the faster M2 speeds (every little helps though). The PCS option is more than enough for the secondary

Bit late to this party but you could probably adjust your storage down to lower speed models without actually noticed much real world difference and save yourself a few £££ - change your 2nd M.2 for a SATA SSD maybe?. You also dont really need 32gb RAM for just gaming. 16gb would do fine - go for 2x 8gb sticks and you can always upgrade further down the line.
