Heh yeh. Well, I wanted to think about it overnight as it's a lot of money for me. Is there a way to be notified when stock is back?

I'm not sure, it's not something I remember seeing though.

There aren't a lot of options unfortunately. 1 would be to opt for the 3070/Ti and take the financial hit. The other option would be to select the 3070ti for the order and then check the availability of the 3060Ti daily. As soon as it's available drop down. The risk here is that your PC would be built quickly and you wouldn't get the chance to substitute for the 3060Ti.

it actually gives a restock date of 10/09/2021 when you proceed on the order

You should be ok doing this as build time is estimated at 13-16 working days and the 10/9/2021 is 9 working days, so if the 3060ti comes in on time it will be 4 working days before the bottom end of your estimate
