It says '1st M.2 SSD Drive' when choosing drive size, but no mention if there is a 2nd or not?

If it doesn’t offer a 2nd m.2 on the configurator, then it only has space for one…so pick at least a 1TB fast SSD as you can’t add to it (internally at least).

If I picked a laptop with 2 m.2 slots, would having 1tb in each be better than 2tb in a single slot laptop?

If you have two M.2 slots, keep the OS distinct from the rest: use a small, fast drive (512GB Gen4) as the OS/Apps/Launchers drive and a larger, slower one (2-4TB Gen3) as your primary drive (games etc.)
