I think they use an oil now, helps with longevity but ironically it isn't as good at cooling. I think it just lasts longer. IIRC the biggest issue with pure water is it doesn't stay pure for long...

You'll struggle to hit overpowered on a £2k budget unfortunately. PC pricing is at an all time high, pretty sure the trend is exceeding inflation by quite a bit.

Faster RAM, larger but slightly slower secondary drive, reduced third drive to try to get to budget (I would be more inclined to look at cloud storage or an external storage solution for long term, far better PSU, better cooler...
Are the benchmarking tests done with the same parameters as the systems that are sent out? If they are then my guess is this microcode update won't have quite the same impact in their testing as it will with others going with the on-board Intel settings during the initial launch.

The corsair is one of the better options with it being dual chamber and offering some reasonable airflow options. You are guaranteed for it to be noisier though as the airflow over a shorter volume is going to increase acoustics.
The micro boards themselves are typically fairly limited as well...
The Super fits straight in and it's definitely the option I would opt for. You get a reasonable performance boost for not a whole lot more money.
