want a flight sim 2020 pc spec plus couple other questions

looking to replace my 5 year old pc specialist i5 pc for something that will run FS2020 with good level of detail -
thinking AMD 5600 5800 5900 and AMD RX6800XT (GIVEN 16GB VRAM) - and 32 GB RAM
appreciate any suggestions - had wanted to spend £1500 but my efforts have pushed spend to £2300 (and not 100 happy with case options available)

have a 27" iiyama 4k monitor

1. anybody any idea how long waiting for stock parts takes 7 - 10 days or a month? don't like idea of paying for something and not getting it for 6-8 weeks
2. prices of components seem to be creeping up every week - thinking no deal brexit could push prices up further in short term so maybe its time to order and lock in on a price
3. X570 chipset best for new ryzen chips?
4. graphics card - expensive item - any idea of what make of card you`ll receive
5. not wanting to overclock - but is water cooling best option - does water need topped up overtime?
6. is it worth getting a dedicated sound card or is on board good enough?

Regarding cases, we're expecting a new batch to hit the configurator soon, that's normally what happens when they take away so many at once as they have done now.

1/. Currently it's around 40 - 50 working days for builds. It's a nightmare at the moment, stock shortages, distribution problems associated with Covid is causing major delays.

2/. TBH, prices are very high at the moment. If it were me, I would hold off until March / April when manufacturers have said they expect stock issues to level out.

3/. X570 would definitely be advised for 5000 series CPU's. And for FS2020, a 5800x would be the sweetspot.

4/. They're usually XFX branded cards for AMD. They do stock another manufacturer, but for the life of me I can't remember who.

5/. An AIO corsair watercooler would be the best option, for the 5800x we'd recommend the H100i Platinum. There's zero maintenance on them other than the standard de dusting every once in a while in the case and fans.

6/. On board sound these days is just as good as a soundcard, especially on Asus and Gigabyte boards. If you're looking more for HiFi realistic sound to plug into a hifi system, then a DAC would be far better than a soundcard. A lot of the boards include 7.1 these days, really depends what your requirements are.
