SSD with lesser RAM?

Hi, I really want a touch screen because I won't be buying top spec laptop again & want it to last. Touchscreen, albeit doesn't intefere with games, but I actually find after using my tablet I go to my laptop screen at times to scroll enlarge etc!
I edit videos/photos/music & make them into dvd's (I don't play games), anything other than my hobby is just browsing/learning. I do want to be able to deal with RAW etc. Anyhow, I don't think pc specialists are going to be doing touch screen in the next 6 mths. As I've been 'researching' for over a year , it's time to go for it!
So....would a 512SSD (unable to find if it's nan etc), with i7 3.... (dual core), with 8 or poss 12gb RAM (£70 extra), blu ray writer (can't find out the speed), & a Nvidia...2gb card, be good for what I want & propose to do?
I would obviously want the highest spec available-Haswell, quad core etc, but....
I truly don't think at my age I will be wanting to do more than what I feel, and I will be buying the new applications (Nero etc) when they can take advantage of win 8.
I don't know anyone to ask in forums - the Sony Vaio forum was to no avail! & even tho' my age & gender, peeps 30yrs younger always ask me to sort their pc probs out:(
I will appreciate any imput. I will pay up tp £1,600, but I do want a touch screen.
Thankyou, & apologies pc specialist! Brill advert & I always recommend you & the peeps on the forum. I've learned a great deal from reading all the threads/answers along with 'academic' research over the last 18mths.
Just don't mention Gingerbread/icecream or jelly bean ha ha x

You might struggle to get the info you want from here if the other members cant spec up a PCS laptop for you. It's difficult to tell you what to go for without blatently advertising the competition. If the touch screen laptop is basically what you are looking for have you seen the AIO PC's PCS offer? They are touch screens and essentially laptops (main difference being they don't have a physical keyboard - but you could get one).
