Alright, about time I revisit this since CES is passed. What should I be looking at for an upgrade between 1/2k EUR? This is my current build I'd like to upgrade that I've had since late 2021, I'd like to increase VR and general gaming performance.

On that platform the only CPU upgrade for gaming would be a 5700X3D/5800X3D (depending on what's available), and with a 750W PSU you're probably limited to a 5070 (it's PCIe 5.0 and you have a PCIe 4.0 GPU slot, but I assume it's backwards compatible).

Maybe even another 2x8gb of the same RAM (AM4 works well with 4 identical sticks).

I agree: a 5700X3D, an appropriate cooler, and a 5070 would be the very best you can do with this build. PCIe 5.0 cards will work fine in any previous gen slot: you won't even notice a performance difference with this generation gap and this tier of card. (A bigger gap or a top-tier GPU could create a measurable difference, but this would be fine.)

The main restriction is the PSU, then? Presumably the other cards have too much power draw in comparison. What kind of cooler should I adopt for them?

Yes, the PSU (being 750w and the older ATX2.4 spec) is the limiting factor for a bigger GPU upgrade, but a 12GB 5070 should give you c.50% performance boost alongside the X3D CPU.

For the cooler, assuming you’re using the PCS upgrade service, we’d probably recommend at least a 240mm Corsair AIO (H100i Elite or 240 Titan). If buying it outside of PCS upgrade service then either a top-end 2-fan air cooler (Thermalright Peerless Assassin 140, Deepcool AK620 or similar) or similar quality / size AIO to the Corsair.

I'd suggest removing the OS key before it is stolen.

What's wrong with the advice you received in your previous thread? To avoid confusion, it is best to don't open multiple discussions over the same argument.

The advice is this thread will be the same as the other thread....if you didn't like the other advice, then that's fair enough but asking the same people the same question is going to result in the same answer.
