Do you think an extra GTX 580 would be overkill?

With the high frequency RAM and high end cooling device you've selected having an overclocked i7-950/970/980x with artic cooling paste would be a better idea (http://www.pcspecialist.co.uk/computers/intel-1366-overclocked/) since you're obviously going for maximum performance with that kind of budget. Upgrade the HDD to a caviar green drive instead for the nice 64mb of cache. A third GTX580 would be overkill especially since you'll be playing at 1680x1050.

Not to mention the third 580 would be running at x8 speed with the second at x8

Motherboard supports either Dual SLI @ x16/x16, Tri SLI @ x16/x8/x8

Great spec, very well balanced. A killer gaming machine! The GTX580 beat the GTX480 by about 40% so whether you need two is up to you...
