Final thing: the monitor I chose from PCS has a 75hz refresh rate. But the g-sync 4K monitor I’m getting from elsewhere is 60hz. I won’t be gaming on both at the same time, but will the two different refresh rates be an issue? Thanks a lot!

Budget and intended use?

If gaming, and not things like video editing or 3d rendering, drop the RAM top 16gb. There's no merit to 32gb for gaming.

Swap the PRO HDD to a 5TB regular HDD, which will be cheaper and probably a little faster.

Drop the USB card. The mobo already provides these ports, and with SLI you want as few add-in cards potentially interfering with airflow as possible.

Monitors with different refresh rates should work fine.

I’m going to be using the Unreal Engine and possibly modelling programs like Maya or 3DS Max, there’s a lot of rendering, etc. involved. 32GB is a must IMO. I will also be gaming on it sometimes, most likely.

Instead, should I go for the stock Standard USB?

Larger, cheaper, and probably faster HDD.
Extra case fans not really needed - case has 3 and cooler adds 2 more.
Default USB options
Couldn't add the headset as it says it's currently unavailable

Office Software
Microsoft® Office Home & Student 2016 (1 Digital License)
This is £122 for Word, Excel, and Powerpoint

Instead, consider Open Office, which is free, open source, and has equivalent software (and more), and is compatible with major formats like .doc, .xls, etc.
https://www.openoffice.org/download/index.html

Since it's free you can check it out on your current system.

I’ve considered OpenOffice, I might end up going for it, though Office 2016 is pretty good. I’ll probably go for OpenOffice as it’s free and I won’t need to use it that much. Does Office have spreadsheet capabilities (I may need them down the line)?

I think you will find Open Office fine but if not you can try Libre Office as well, they are almost the same, were initially the same project until Libre forked.
