Setup mainly used for gaming: Assetto Corsa Competizione, Flight Sim, BF 2042.

I've got a triple monitor setup using the Dell U2715HC's for the Simrig and a single Dell U2715HC for when playing BF, etc.

I would look at upgrading those monitors, Those are 1440p 60hz monitors, and are going to bottleneck that 3080,

You'd want something along the lines of a Samsung G9 / G9 Neo or a 4K 144hz monitor to get the best out of that 3080, That 3080 is way overkill and just too powerful and a waste for 1440p at 60hz.

I fear you'd say that.

Do you think i'd be better off downgrading to a 3070 - would this card cope with triple monitors at 1440/60hz?

I'm not too clued up on triple monitor set up requirements, but i would think that a 3060Ti would be more than powerful enough to run 3 1440p 60hz monitors,

Possibly a 3070 if those monitors were 1440p 144hz.

Please ignore my goof up,

I had watched this video and thought a 3060Ti would have been enough for a triple 1440p 60hz setup...

though is does recommend a 3080 for high refresh rate triple 1440p monitors, i don't consider 60hz to be a high refresh rate,

Considering your upgrading your desktop monitor to 4K 144hz, that will be a nice setup and worth a 3080.

Personally I've gone for a 32" 4K but if you want 27" then CCL have the Asus XG27UQ in stock at £699

Looks like a decent model - shame it has such a big bezel (by todays standards!)
