I’ve prised a couple of drives out of an old tower and rather than them ending up with a load of miscellaneous screws, fuses and keys in my man-drawer, I’m considering converting them to act as external drives for backups.

I’ve got one SATA SSD and one HDD, does anyone have any recommendations for good quality caddies?

I bought one of these last year and it's absolutely superb for the price, it's only 2.5" though, but doesn't need a separate power supply:

If you want a 3.5", I'm a huge fan of UGreen generally, they do really great quality stuff, it's more premium than most out there but still for reasonable money:
