I would really appreciate some guidance on the below build. The parts I am most unsure on have red question marks beside them.

If you're not changing to 4K in the next 12 months, then you can save £250 by going for the RTX4070Ti Super.

But here's where I'd be if we keep the 4080 Super in there...mostly the same, just some tweaks to RAM, PSU and storage config.

Yes, the cooler (2x120mm) is plenty as it's a very efficient CPU. Of course there's nothing stopping you putting a H115i (2x140mm) if you want the same performance at a lower RPM...or the H150i (3x120mm) if you want more RGB.

But I was trying to keep to the £1500 budget ;)
