Hi all, I've been having issues with my PCS PC since Xmas eve when it arrived. It was found after some trouble shooting that I had a faulty motherboard, so I returned the PC to have that replaced. My issue is that it still crashes playing most games though and I really don't know why so as a last ditch solution I'm hoping a clean reinstall of Windows will remedy things.
I've got the serial number for my windows install, though as I understand it I shouldn't need it, and I've got the USB ready with the correct version Windows 10 on it. My issue is that when I got to the "Where do you want to install Windows?" screen, I suddenly felt spectacularly out of my depth! Currently, over my 2 SSD's (the M.2 having Windows on it) the screen states:

My question is, do I just delete all of these and install, or do I need to keep some? I use this PC for gaming only (as much as it permits) so there's no data I need to preserve, it's just the games and the stores/launchers (Steam, Epic, Ubisoft's launcher, Rockstars etc) so I can just re-download and install all that again.
I'll give a bit more info in case anybody has any other suggestions of a better course of action; basically, most games that I try and play, AC Valhalla, GTA V, Watchdogs 2, Ori and TWoTW being the main I've been trying to get working all crash after between 2mins and about 40mins of gameplay, usually at the shorter end. I've run the System File Check and DISM scan, both fine. I've installed and keep on top of all Windows updates, Nvidia drivers are up to date and I've got the AMD driver updater from their site for the CPU too and have updated the MoBo to the latest non-beta update a few days ago. I also just use the in-built Windows anti-virus.
The event viewer shows the faulting application and module is the game's .exe, and the exception code is usually 0x c0000005.
Also, on boot up, prior to returning it for a new MoBo and after, I get one long beep and 3 short if the monitor isn't on/connected (with the accompanying VGA light) but it seemingly displays fine with or without the beeps. Also, my RAM is 3600Mhz but all games fall over instantly if it's set to that and it fails memtest86 tests, but all sticks pass fine if set to 3200Mhz. Downclocking via the XMP profiles to 3200Mhz seems OK. I've tried going lower but it doesn't stop the crashes. Cyberpunk runs well and hasn't crashed in the last 50 hours of play with the settings all up really high, and Doom Eternal and Dirt 5 run really well too, so I really don't know what that means.
This is a lot of info, thank you if you're still here; any help will be gratefully received! I'm new to PC gaming and knew it wouldn't be as "plug-and-play" as a console, but it can't be that about 60% of the games you play will crash every 10mins, right?!
