For AMD GPUs I think it is usually powercolor. Is it just for gaming? you wouldn't have any issues with 2xHD 7950 with 2 monitors.

Yes, It will be just for gaming on 1 monitor at 2560x1400. Will it be enough power and Vram from the 2 cards?

The 3gb Vram for the resolution you are indicating will be fine.
Depending on your budget, if it is just for gaming I'd consider the i5-3570 + GTX 670 in SLI, 8gb memory ram will also be plenty for gaming.

Will GTX 670 sli be ok for 1440p gaming?
Also I'm not looking to play super demanding games like BF3 or metro 2033 (I think they tax your system alot), Games like total war games, dirt 3, sims 3 etc.

And i'm not looking on ever doing any video editing or anything like that so should I drop it down to a i5?

EDIT: And what brand would the 670's be?

The GTX 670 will probably be palit. The GTX 670 in SLI should perform better than the HD 7950 in crossfire. If you are not planning to do any video editing or more cpu intensive applications then you wouldn't need an overclocked cpu or the i7 and 8gb memory ram will be plenty.
